Ingredients:
1kg of fruit
300grms of honey, maple syrup or pear syrup (or pear’n apple spread)
3 teaspoons of Agar Agar
Juice of half a lemon
Wash (if necessary) and select fruits. Use only fresh/frozen and immaculate fruit.
Mash the fruit with your chosen sweetener and preferably store overnight, or if short of time continue.
Bring mixture to the boil for 3 - 5 minutes.
Mix Agar Agar with the lemon juice, add to the fruit and stir the mix for another minute, then fill into sterilized glass jars with twist-off lid, turn upside down for a few minutes, store cool.

Note: Agar Agar is a gelling agent made from dried seaweed. It can be got in health food stores.
In general 1 teaspoon of Agar Agar is sufficient for 500 grms of fruit. You can test the gelling as follows: let a bit of the mix drip on a plate and cool down, if it runs off , you need more Agar Agar.
